Delicious Rainbow Trout Recipes

The following rainbow trout recipes can give you a great sampling of the different ways that this fish can be served. Here are a handful of that are designed to get you drooling time and time again. Both recipes use tomatoes which work really well with the taste of the fish but which highlight different aspects and flavors of this delicious fish.
Rainbow Trout a la Colby
2 rainbow trout fillets with skin still on
2 green onions finely chopped
1½ tablespoons chopped, cooked bacon
1 tablespoon ripe tomato, chopped
2 tablespoons Colby cheese, grated finely
Fresh lemon
To Prepare:
Preheat oven to 375°F.
Prepare baking dish by covering it with parchment paper. Place fish, skin side down, in baking dish.
Sprinkle fish with tomato, bacon and onion and squeeze lemon over fillets.
Place in oven and cook for ten minutes.
Take baking dish out of oven and mix cheese over fillets. Return baking dish to oven and finish baking for five minutes more. Cheese should be fully melted.
Serve with freshly cut lemon wedges.

Rainbow Trout Baked With Tomato
1 lg fillet of rainbow trout
2 finely chopped large tomatoes
4 finely chopped scallions
1 c. Swiss cheese, shredded finely
1 ½ tablespoons sea salt
½ tablespoons freshly ground black pepper
¼ c. butter, melted
4 limes, fresh
1 tablespoon good quality balsamic vinegar
3 tablespoons onion, grated
1 teaspoon fresh dill, finely chopped
To Prepare:
Prepare oven by preheating broiler. Prepare baking dish by greasing sides and bottom.
Place fillets in prepared dish. Sprinkle pepper, salt and onion into dish. Cover fish with chopped tomatoes.
Broil fish in preheated oven for 10-12 minutes, or until fish is fully cooked. This will mean that the fish will flake easily with a fork. While fish is cooking, juice limes and place scallions into the juice. Add dill and balsamic vinegar to this mixture.
Remove fish from oven when it is finished cleaning. Mix fish with grated Swiss cheese when it is out of the oven. Pour lime juice mixture over fillets and serve.
